Christmas Day 2007


So, this is my first post to my brand spanking new blog spot. I am a 51 year old woman who's daughters have to help her with most things electronic. This afternoon I made chili rellanos casserole. Here is the picture . . . . and the recipe is:

  1. 5 eggs
  2. About 1 cup milk (who measures?)
  3. Some seasoning salt (how much do you like?)
  4. One 7 oz. can of diced green chiles
  5. A dash of red pepper flakes
  6. Cayenne pepper
Whisk the eggs with the milk, add spices and diced chiles. Grate in some pepper jack cheese and mix well. Pour into a casserole dish (not too big unless you are doubling the recipe). Grate on some more pepper jack cheese on top (or cheddar if you prefer). Bake at 350 degrees for 40 minutes. If you use a larger casserole dish and the egg cheese mixture is not very deep, you will need to keep an eye on it to make sure it doesn't overcook. Enjoy!
